Easy Banana Muffins (Two Bananas)

I automatically see a race when recipe instructions start with "preheat your oven." There is nothing more satisfying than whipping together all your ingredients and putting them into a baking dish BEFORE the oven beeps to tell you it is hot enough. This recipe is so quick and easy, the oven doesn't stand a chance.
I only ever seem to have two sad bananas laying around. Since there is not much you can make with two, I needed a solution other than tossing them or filling up my freezer up with random ziplock bags of bananas. This recipe solved my problem. As an added bonus, just one bowl and a few kitchen utensils are needed (read: easy cleanup).
Easy Banana Muffins
Ingredients:
2 large over-ripe bananas | 1 tsp baking powder |
1/2 cup sugar | 1/4 tsp salt |
1 large egg | 1/4 tsp cinnamon |
3 Tbs vegetable oil (I use olive oil) | 1/4 tsp vanilla extract |
1 cup flour | 3/4 cup chocolate chips |
1/2 tsp baking soda | Extra sugar for topping |
Equipment Required:
one medium-sized mixing bowl
a tablespoon
a 1/4 tsp measuring spoon (use several times to measure larger quantities)
one cup measuring cup with 1/2 and 3/4 markings
mixing spoon/spatula
fork (for mashing bananas)

Directions:
Preheat oven to 350.
Mash bananas with a fork.
Add all other ingredients and mix well.
Grease or line muffin tray. (This recipe makes around 10 muffins.)
Fill holes 2/3 of the way full.
Sprinkle sugar on top.
Bake for 18-22 minutes.
