Easy, Healthy, & Quick French Bread Pizza (2 ways!)

Hi!
Today I wanted to share with you this super-duper simple, healthy, and quick recipe that has become a staple in our kitchen. It is a great meal for those days when you forgot to plan for dinner, want a quick dinner, or just want to enjoy a quick and healthy snack with minimum effort.

Prep Time: 5-15 minutes (depending on variation)
Cook Time: 5-20 minutes (depending on variation)
Total Time: 10-35 minutes (depending on variation)
-First Method-
Ingredients:
1 whole loaf of French bread
1-2 tbsp of softened butter (optional)
2 tbsp of Italian seasoning
Pepper and sea salt to taste
2 tbsp of extra-virgin olive oil
1/4 cup of raw spinach leaves
1/4-1/2 cup of mozzarella cheese
1/4 cup of sliced cherry tomatoes (or a diced regular tomato)
Instructions:
Slice the bread into 1/4-inch to 1/2-inch slices. If you want, you can spread the butter onto each of the slices. I find that it adds a nice crispiness while still keeping the bread somewhat moist.
Lay all of the slices on a greased baking sheet.
Sprinkle the Italian seasoning, salt, pepper, and olive oil onto each of the slices.
Layer your slices with spinach, cheese, and tomatoes.
Broil for 5 minutes, or until the cheese is golden-brown.
Top with more olive oil and sea salt if you desire.

-Second Method-
Ingredients:
1 whole loaf of French bread
2-3 tbsp of softened butter (optional)
3 tbsp of Italian seasoning
Pepper and sea salt to taste
4 tbsp of extra-virgin olive oil
1/4 cup of raw spinach leaves
1/4-1/2 cup of mozzarella cheese
1/4 cup of sliced cherry tomatoes (or a diced regular tomato)
Pizza sauce or marinara sauce (optional)
Sausage, pepperoni, etc. (optional)
Instructions:
Preheat the oven to 400 degrees F / 204 degrees C.
Cut the loaf of French bread in half lengthwise.
Spread the butter (if using) on the two bread slices.
Add the Italian seasoning, salt, pepper, and olive oil to the bread.
If you are using a sauce, you could add that at this point. I would suggest adjusting the amount of Italian seasoning to your taste if you are using a sauce.
Add the spinach, cheese, tomatoes, and meat (if using) or any other toppings you want.
Bake for 20-25 minutes, or until the cheese is golden-brown. You may have to broil it for a minute or two if you want more color on the cheese.
Top with more olive oil or sea salt if you want.

Notes:
Be aware that adding additional toppings to either of the methods will affect the nutrition facts.
I like to use The Essential Baking Company’s French bread. It is organic, cost-effective, quick to bake, and its pantry shelf-life is about 5-6 months! This is due to the fact that they vacuum-seal the loaf of bread, which keeps it fresh for a long time without taking up valuable freezer space.
It helps to move the second method of pizza onto a cutting board before cutting it as it can be a little difficult to cut sometimes, especially if you add a lot of toppings.
This is definitely one of the easiest recipes I have discovered, and one of the things I like most about it is that it is 100% customizable: sometimes we add sauce, sometimes we add meat, and so on. It is basically like a healthy, effortless, but still yummy, pizza.
I personally prefer method one and this is mainly because it is quicker and easier to serve. Depending on the number of toppings you put on the second method, it can be a little messy and hard to cut sometimes. The first method is also kind of dainty in a way and feels more sophisticated for a pizza, which I like because it does not cause me to go into a food coma upon eating it. 😅
