Easy Kielbasa and Veggie Sheet Pan Dinner

This is my go-to dinner recipe for those nights where I need something quick, nourishing, and warm in my family's bellies. I keep kielbasa and frozen veg stocked in my freezer, so I always have the ingredients on hand. It also only takes about 30 minutes to make, and one pan and a rice cooker to clean. Sheet pan dinners for the win!
Sheet Pan Kielbasa and Veggies
Serves: 4 (You can easily scale this up by adding more of any of the ingredients.)

Prep time: 5 min.
Cook Time: 25-30 min.
Total Time: 30-35 min.
Ingredients:
1 pack kielbasa, cut into rounds
2 1-lb bags of frozen vegetables, I like broccoli crowns and cauliflower. If you have fresh veg, even better! Wash, chop, and use that.
Olive oil
Salt and pepper
1 cup rice or enough potatoes to feed your family (If doing potatoes, cut them into wedges. Figure one large potato per person.)
Instructions:
Preheat oven to 420 degrees F.
Cook one cup of rice in your rice cooker along with one cup of water, if making with rice.
Place vegetables on an extra large sheet pan and drizzle the vegetables with olive oil. Sprinkle with salt and pepper and give it a toss with your hands. Use only enough oil to cover the veggies, otherwise you will create a greasy mess. Do not use parchment or foil for easy clean up, because this inhibits nice browning on the veggies. If you don't have an extra large sheet pan, use two smaller ones and rotate them (top to bottom, back to front) half way through.
Add sliced kielbasa and spread everything evenly. I prefer to mix the kielbasa with the veggies rather than keeping them all together because the kielbasa will flavor the veggies as it bakes. Just make sure the kielbasa are touching the sheet pan.
Bake for 25-30 minutes.
