Hot Chocolate Mug Cake

This post was inspired by several late night hankerings for chocolate cake.


Hot chocolate mug cake is incredibly easy to make, and you probably have all of the ingredients already on hand. This cake is so good it makes me dance in my kitchen every time I make it!


The problem with most mug cake recipes is that they usually produce a dry, tasteless cake, but not this one. This cake is so fudgy and moist that you will not believe this was made in the microwave!

Hot Chocolate Mug Cake

Servings: 1

Prep Time: 5 minutes

Cook Time: 70 seconds

Total Time: about 6 minutes


Ingredients:

  • 1 package Hot Cocoa Mix (such as Swiss Miss)

  • 3 tbsp flour

  • 1/4 tsp baking powder

  • pinch of salt

  • 1 tbsp chocolate chips (optional, but recommended)

  • 2 tbsp milk

  • 2 tbsp neutral oil (such as light olive oil, can also use melted butter)

  • 1 tbsp honey

  • extra butter for greasing mug

  • any desired toppings: whipped cream, berries, mini marshmallows...

Instructions:

  1. Lightly grease a coffee mug with butter.

  2. In a small bowl, mix together dry ingredients. You must not skip this step, as incorporating everything all ingredients all at once will not allow the cake to set up properly.

  3. Add wet ingredients to the dry and combine until smooth.

  4. Pour batter into mug.

  5. Microwave 45 seconds.

  6. Microwave 25 seconds more. Do not over bake! It is better for the cake to be slightly under cooked than overcooked.

  7. Add toppings and enjoy!


Notes:


What type of mug to use

You should use a mug that holds at least a cup and a half of batter. The batter will fill the mug about half way, and rise a bit while cooking. You also will want to have some extra mug space for any toppings you may want to add.


Microwave cook time

Cook time will depend on your microwave wattage. My microwave is 1000 watts and my cake was perfect after a 45 sec. and then 25 sec. cook time. My suggestion would be to start at 45 seconds of cook time, then do 15 second spurts until cake feels spongy and the center is just set. It is better to slightly under bake this mug cake.


This mug cake completely restored my faith in single-serve microwavable desserts, and with how easy it is to make, it is a good one to keep in your back pocket when you need a quick chocolate fix!
